Thanh Luong Vegetarian is the only fully vegetarian Vietnamese restaurant in Minnesota. You know you have a good problem on your hands when you can’t make up your mind because so many menu items sound so good. This is THAT kind of restaurant.
It’s such a treat to open a menu (as a vegan) and find almost the entire menu filled with vegan options. There are some dishes that contain dairy and eggs, but truly, the majority of the menu is vegan.
What we loved, too, was that the menu is super clear: vegan pork, vegan fish sauce, vegan steak chews, vegan ham, vegan shrimp, etc. Plus, if the dish contains egg or mayo, it clearly states that a vegan option is available. No guessing!
The food is so fresh and good. This restaurant will be on repeat so that we can try all the options. The menu is huge.

You’ll find Thanh Luong Vegetarian in a strip mall setting. Parking is super easy to get to. It’s a convenient stop if you’re local or road-tripping through the Twin Cities (like us).
What to Expect- Atmosphere & Experience at Thanh Luong Vegetarian in Minnetonka


Nestled in a strip mall, the restaurant offers patio dining during the summer months. This is a sit-down restaurant with ‘fast-casual’ table service, so it’s a great spot to grab a quick lunch or dinner.
We found the ambiance to be cute and welcoming for dine-in.
Both times we’ve eaten here, the take-out counter has been BUSY! Always a good sign at a restaurant. There was a steady stream of people picking up orders, which is always a great indicator of a good restaurant.
Our waitress was so incredibly helpful- she had a ton of knowledge and was a fantastic server.
Another fun detail, near the counter, is a cooler stocked with grab-and-go items, along with a small selection of Vietnamese treats and snacks.
You do not need to be familiar with Vietnamese cuisine to want to eat here!
What We Ordered
We’ve eaten here twice and, of course, had to try different items. These dishes were something we’d love to order again, but truly, we’d like to eat our way through the entire menu.
Spring Rolls

Seasoned tofu, shredded lettuce, rice vermicelli, crunchy wheat shreds, and assorted herbs wrapped in rice paper, served with Vietnamese peanut sauce.
Braised Eggplant and Mushrooms

Kelly has been dreaming of this dish since we ate here. It was so cozy and delicious. Absolutely incredible.
Eggplant, tofu, mushrooms, peas, carrots, corn, green beans, braised in a dark soy sauce with a side of rice.
Vegan Banh Mi

When we see a vegan Banh Mi at any restaurant, it’s kind of a clue that the restaurant has some creativity (vs. just serving a fake-meat patty for their vegan option), and we have to try it.
The menu at Thanh Luong Vegetarian has FIVE vegan Banh Mi options. Wow! These sandwiches are huge and shareable. Absolutely fantastic.
Vegan Chicken Pho

Pho rice noodles, onions, mushrooms, tofu, vegan chicken, broccoli, cilantro with bean sprouts, Thai basil, jalapeños and a slice of lime.
Spicy Beef Noodle Soup
Thick rice noodles in spicy vegan broth with vegan beef, tofu, steak chew, mushrooms, bean sprouts, Thai basil, jalapeños, and a slice of lime.
WOW. As we said, every dish was incredible. Our waitress told us that they use plant-based proteins designed to replicate traditional textures. We haven’t always been vegan and would have legitimately thought it was real meat.

YES. You don’t have to be vegan or vegetarian to enjoy the huge menu. Trust us, you’ll have a hard time choosing from so many delicious menu options, and you’ll be planning your next visit before you even leave.
